Apple & Cinnamon Muffins with Fruity Streusel
Makes: 10-12 muffines
Ingredients:
Muffins
200g (1 ½ cups) LLWF Baking mix
2 green apples – grated
½ cup dried coconut
1 tbs ground cinnamon
1 tsp vanilla paste or powder
2 eggs
2 tbs coconut, avocado or olive oil
75ml coconut or almond milk
Crunchy Fruit Steusel
½ cup dried coconut
½ cup sultanas
½ cup almonds
2 tbs LLWF Baking mix
2 tbs coconut sugar, maple syrup, rice syrup or honey
1-2 tbs butter, coconut oil or nutelex
Preparation:

Preheat oven to 180 degrees celcius then grease or line 10 muffin pans

Add the first 5 ingredients to a large mixing bowl and stir to combine. Make sure that the apple has separated and all strands covered in the dry mixture as this will ensure that it is properly distributed in the cooked muffins

Make a well in the centre of the dry mix then add the eggs, oil (make sure oils are soft) and the sweetener.

Fold the wet mix through the dry until you get thick dough then spoon into the muffins pans and bake for 10 minutes

Make the Crunchy fruit Streusel then proceed with recipe as per streusel instructions.
Crunchy Fruit Streusel

Add all streusel ingredients to a blender or food processor and blend until well combined and the mixture has a coarse muesli like and appearance and is a bit sticky.

At the 10 minute mark of baking remove the half cooked muffins and quickly spoon a tablespoon or 2 onto the top of each muffin then quickly return them to the oven for another 10 minutes until they are cooked.

Allow to cool. They store well in the fridge.
