Grain Free Muesli Waffles 

Apple and Cinnamon with Fruity Streusel
Makes: 3 large or 6 small

Ingredients:

 

1 cup LLWF Self Raising Flour

½ cup homemade natural muesli

3 tbs tapioca

1 tsp ground cinnamon

½ cup maple syrup

½ cup coconut oil

2 tsp vanilla

1 ¼ cup coconut milk

2 tbs aquafaba*

 

Preparation:

 

  1. Preheat waffle maker to specifications, I did these on the Belgian setting if you have a waffle maker that has different settings, if not, standard setting is fine on medium heat.

  2. Add flour mix, muesli, tapioca and cinnamon to a large mixing bowl and stir to combine.

  3. Add the melted coconut oil, maple syrup, vanilla , milk and aquafaba to the bowl and stir to combine, it will thicken

  4. Spray the waffle maker with a non stick spray such as coconut oil

  5. Add the mixture then cook for approx. 4-5 minutes or until done.

NOTES:

​

  • For a 100% grain free and gluten free waffle ensure that your meusli is grain free and gluten free. 

  • Aqufaba is the water from a can of chickpeas or other beans such as cannelloni, red kidney or mixed. 

​
