Breakfast, Brunch or Lunch?.. Sweet Potato Waffles
I was out of my homemade bread over the weekend, so while I had the waffle maker out (waffle Sunday and all) I decided I'd better put together some savoury waffles for lunch seeing as that we were not going to go out. Unfortunately all of our fav places would have been shut and those that were open would have been packed and we don't do crowds for lunch.
I love that these are just a simple mix of very healthy and wholesome ingredients and they really don't take that long to make. Cover anything with ripe avocado and you're off to a good start. Our little heat affected veggie garden supplied the rest. (OMG, summer is harsh around here 🤯) The heat has really given some of our veggies a hard time but it's all survived, just not thrived. We have an abundance of heirloom tomatoes, little eggplants, capsicums, shallots, zucchinis and spinach/silverbeet. The spaghetti squash has seemed to do the best, it must love hot weather. Needless to say, grill up the veggies and put them on top with a sprinkle of Dukkah and fresh greens and you have a delicious meal. Oh, Balsamic glaze and Chilli Salt doesn't go astray either. Add them as well.
This is the reason the waffle maker was out!!! Easter Sunday combined with my Waffle Sunday equals Easter Bunny Waffles with Caramel Cream. Yes, they were very yummy. I even remembered to jot the recipe down. I'm actually thinking of doing up a little ebook of my crazy waffle creations. I have so many that I haven't even shared pics of. I'll also have to add a few to my recipes pages here on the site.
